Although I love pizza, I’ve never stopped here before.  The fact that you must order an enter pizza at a helping daunts most people, even people with monstrous appetites like me.  Having not eaten for eight hours (normally I eat every two to three hours), today presents the perfect opportunity to try one of their pies.

Having a mobile, wood-fired over is their claim to notoriety.  You can see the oven from the ordering station and it certainly looks like a wood oven, complete with brick trim.  For greater effect, they line up whole logs in front of the truck.  I see no smoke coming out of a stack so I’m a bit skeptical about the fuel used.

Regardless of the fuel, the pizza comes with a nice crust, mildly charred on the bottom with a bit of bubbling, just like it should coming out of a super-heated oven.  The crust tastes great but there’s a bit too much crust for me.

The sauce and the ingredients don’t come near the edge of the dough so you’re left with a lot of undressed bread at the rim.  Within the pie, there’s plenty of good tomato sauce (I love lots of sauce on my pizzas).  I ordered the prosciutto and while I can taste a strong saltiness, I don’t see much of the ham.  There’s a fair bit of cheese—and I don’t think you can ever have too much cheese on ‘za.  The abundance of arugula makes this meal; arugula is one of my favourite vegetables and they drop plenty of leaves here.

Fired Up Pizza only offer six types of pizza combos:
·         Prosciutto, Mozza & Arugula
·         Meat Lover
·         Pepperoni & Mushroom
·         Spinach, Pesto & Provolone
·         Ham & Pineapple
·         Pepperoni, and
·         A special of the day

Although I would like to see more topping, and see it come closer to the edge, this is still a quality ‘za.  Even though it looks big, it’s not as gargantuan as it looks.  Next time, I know I don’t need to wait until I get into a ravenous rage before I come here.
