Little Bones
July 2018
Oddly, the portions come as seven wings for a single, and 14
wings for a double. Normally, vendors
sell by the dozen or by the pound. A
dozen heavy for me as an appetiser, but too light as a main. I guess 14 would be a good number for a meal.
I am wrong. The wings
here pack some good heft and after 14, I feel pretty darn full. Even as a big eater, the double is plenty and
many would be ok with the single serving.
They offer many choices of sauces and flavours. Unfortunately, all of the sauces/spices come
after the wings are cooked. This makes
for efficient preparation but not for good penetration. Wings need to marinade in their sauces to
take on their characteristics. As is,
these wings only have the flavour on the surface.
The buffalo sauce tastes nice and rich, with a good pack of
heat. I try both the dry and the wet
Frank’s and find the dry sorely lacking.
The dusted powder falls off quite easily, leaving you with a lightly
spiced wing. Even though the wings
aren’t marinated in the sauce, it’s still a better option than the dry.
Sauce aside, the wings have plenty of meat and they come
well-cooked. Just done and roaring hot,
there’s plenty of moisture in the meat.
Good job.
